Turkey roll-ups

Preparation time: 15 minutes
Baking time: 25–30 minutes (oven)
or 5–6 minutes (microwave)



12 slices (1 ounce each) oven-roasted turkey breast (such as Healthy Choice Deli Traditions)
6 slices (3/4 ounce each) fat-free processed mozzarella cheese
16 ounces frozen broccoli spears (12 spears), thawed and drained well
Cooking spray
1 jar (12 ounces) fat-free turkey gravy

On a clean countertop, lay out two turkey slices, overlapping somewhat and oriented so that you will be able to roll them into a cylinder shape. Lay one slice of cheese on the turkey slice closest to you. Place two broccoli spears on the cheese, and roll the turkey and cheese around the broccoli. Secure with a toothpick. Repeat to make five more roll-ups. Place roll-ups in a baking dish coated with cooking spray. Cover tightly with plastic wrap and refrigerate until baking time.

When ready to bake, preheat oven to 350°F. Pour gravy evenly over roll-ups, cover the pan with foil, and bake for 25-30 minutes, or until heated through. To cook in the microwave, cover the pan with microwave-safe plastic wrap instead of foil, and heat at 100% for 5-6 minutes, or until heated through.

Yield: 6 roll-ups
